Prof. Dalla Rosa is a Full Professor in the Department of Agricultural and Food Sciences at Alma Mater Studiorum – Università di Bologna, Italy, and is internationally recognized as one of the leading experts in food technology, food formulation, and process innovation. His academic career spans more than four decades, including research experience at CSIRO in Sydney, Australia, followed by academic appointments at the University of Udine before joining the University of Bologna as Full Professor in 2000. He has authored more than 200 scientific publications and has made outstanding contributions to food processing, preservation technologies, packaging systems, and food quality engineering. He has also been recognized among the world’s top scientists for his research impact.
From 2018 to 2024, he coordinated the Degree Course Council in Food Technology at the Cesena campus and chaired the national coordination of Food Science and Technology degree programs (COSTAL). He previously served as Director of the Interdepartmental Center for Industrial Agri-Food Research and has played key leadership roles in major international scientific events, including EFFoST, FoodInnova, and IUFoST 2024.
His current research focuses on food formulation and innovation, minimally processed foods, sustainable packaging systems, thermal and non-thermal food preservation technologies, food structure engineering, and circular approaches in agri-food processing. His recent interests also include process optimization, quality retention during food transformation, innovative packaging solutions, and the development of sustainable food systems aligned with future consumer and industrial needs.
Through his scientific leadership, international collaborations, and academic mentorship, Prof. Dalla Rosa continues to shape the future of global food science and technology.
