𝗣𝗿𝗼𝗳. 𝗟𝗲-𝗕𝗮𝗶𝗹 is a distinguished Professor at Oniris Nantes VetAgroBio, Nantes, France, where he conducts teaching and research within the UMR GEPEA (Process Engineering applied to Food Science and Environment), affiliated with CNRS. He is internationally recognized for his expertise in food process engineering, particularly in heat transfer and phase transitions in complex food systems.
His research has significantly advanced the understanding of how processing conditions influence food structure, functionality, and quality. His work places strong emphasis on the physics of interfaces under external fields, such as electric, microwave, and ultrasound, and on gas interactions during food preparation and processing, with important applications in baking technology and refrigeration.
𝗣𝗿𝗼𝗳. 𝗟𝗲-𝗕𝗮𝗶𝗹 has held several prominent leadership roles in the global food science community. He served as Past President of IAEF (2019–2023) and is currently the President of the IIR-IIF Commission C2 (Food Science and Engineering, 2019–2027). He also contributes extensively to scientific publishing as Co-Editor-in-Chief of Innovative Food Science and Emerging Technologies (Elsevier), Editor of the International Journal of Food Properties (Taylor & Francis), and as a member of editorial boards for journals including Journal of Food Engineering, Food Chemistry Advances, and Applied Food Research.
