Prof. Paola Pittia is a Full Professor of Food Science and Technology at the Department of Bioscience and Technology for Food, Agriculture and Environment at the University of Teramo, Italy, where she also serves as Deputy Rector for Internationalisation. She is internationally recognized for her contributions to food processing, food quality, sustainable food innovation, and higher education in food studies.
Her research focuses on both conventional and emerging food processing technologies, the technological functionality of food biomolecules, and the development of innovative and sustainable food ingredients and formulated foods with enhanced nutritional, stability, and health-promoting properties. Through her work, she has contributed significantly to advancing scientific understanding of how food structure, processing, and formulation influence product quality and consumer benefits.
Prof. Pittia’s current research interests include sustainable food processing, valorisation of food resources, development of functional ingredients, food stability and shelf-life enhancement, and innovative food design approaches that support healthier and more sustainable food systems. Her work also explores the relationship between food processing, ingredient functionality, and product performance, helping bridge scientific innovation with industrial application.
Prof. Pittia currently serves as President of the ISEKI-Food Association and is a Fellow of the IUFoST Academy, reflecting her long-standing commitment to strengthening global collaboration among academia, research institutions, and the food industry.
