We are pleased to announce Dr. Maria Martuscelli as a Speaker at the Trends in Food Science and Emerging Technologies – An International Conference (TFoSET), taking place from November 25–27, 2026, in Prague, Czech Republic.

Dr. Martuscelli is an Associate Professor in the Department of Bioscience and Technology for Food, Agriculture and Environment at the University of Teramo, Italy. Her research expertise lies in food safety, food quality, food microbiology, and biogenic amines, with a particular focus on their occurrence and formation in foods of both plant and animal origin.
Biogenic amines (BAs) are naturally occurring biomolecules with important physiological functions, but their presence in foods can also raise significant food safety and health concerns. Their occurrence is influenced by several factors, including agronomic and breeding practices, microbial communities, storage conditions, and food processing and manufacturing practices.
Her presentation will explore how BAs can serve as important indicators of food quality and safety, while highlighting the current gaps in regulatory standards. Although maximum limits have been established for histamine in certain fish and fish products, comparable standards are lacking for many other foods and beverages.
Particular attention will be given to the growing evidence of BAs in foods of plant origin, consumer awareness of potential risks, and the possibility that some BA-related symptoms may remain overlooked or misattributed to other food-related conditions.
Taking a One Health perspective, the session will examine whether biogenic amines should be considered not only in relation to human health, but also in the broader context of animal health, environmental factors, food production, and sustainable food systems. The discussion will also highlight the need for further research and investment to better understand exposure, establish appropriate safety strategies, and protect consumers.
Join us at TFoSET this November for a discussion on an emerging food safety challenge at the intersection of food, health, and One Health.
