Dr. De Francesco is an Associate Professor of Food Science at the Università degli Studi di Perugia, Italy, and serves as a manager at the Italian Brewing Research Centre (CERB) within the Department of Agricultural, Food and Environmental Sciences. With extensive expertise in food, malting, and brewing science, he has contributed to research and education in the field for more than a decade.

Accurate characterization of food-waste streams is essential for developing effective circular economy and biomass valorization strategies. However, conventional lignocellulosic analysis methods developed for wood-based biomass can produce significant errors when applied to complex food wastes containing high levels of fats and extractives.

His research proposes an improved analytical framework specifically designed for heterogeneous food-waste matrices. By combining validated HPLC-ELSD and GC-MS methods with sequential defatting, extractives removal, and correction for degradation products, the approach provides more reliable measurements of cellulose, hemicellulose, lignin, and key degradation compounds.

The study highlights the importance of accurate analysis, showing that conventional methods can substantially overestimate lignin and underestimate cellulose and hemicellulose in certain food-waste streams. These improvements can support better biomass classification, process selection, resource recovery, and sustainable valorization of food waste.

Dr. De Francesco’s research connects analytical food science with the principles of the circular bioeconomy, helping transform complex food-waste streams into valuable resources.

Join us at TFoSET 2026 to explore innovative approaches for turning food waste into opportunities for sustainable food and bioprocessing.
